Bran muffins are chock-ful of fiber and whole grains, but the kids often ask for something different. Here’s a new spin on an old standard.
In a large mixing bowl, combine:
- 2 cups All Bran Cereal
- 3 tbsp dark molasses
- 1/2 cup orange juice
- 3/4 cup very hot water
Allow to completely dissolve and then add:
- 1 egg
- 4 tbsp oil
- 1/4 cup low fat vanilla yogurt
Blend and add:
- 3/4 cup whole wheat flour
- 3/4 unbleached flour
- 1 tbsp. baking soda
- 1/2 tsp salt
- 1 tbsp Sweet Seasoning (blend of cinnamon, allspice, nutmeg, cloves, and ginger). If not available, use cinnamon.
Bake in 375F oven for 20 minutes or until done. Makes 12 muffins.
