Greek Yogurt Banana Muffins

By substituting sweet banana and molasses and by adding Greek Yogurt to the mix, I was able to completely eliminate processed sugar and boost flavor, moisture and protein content while keeping these muffins under 100 calories each. Imagine eating a muffin with less calories than a slice of bread!

In a microwave-safe mixing bowl heat 1 cup Nonfat Milk. Add 3 cups Total or other whole grain-flake cereal.

When softened, add 1 egg, beaten, and 1/4 cup dark molasses. Add 1 to 1 1/2 bananas, ripe or over-ripe. Using a masher or fork, mash banana into mixture. Blend in 3 tbsp fresh grated orange peel and 1 cup of plain Greek yogurt.

In a separate bowl, combine 1 cup whole wheat flour with 1 tbsp baking powder and 1/2 tsp. salt. Add flour mixture to batter. Drop into greased muffin tins and bake at 350F for 20 – 25 minutes or until done.

Makes 16 muffins.
